Cloves are the aromatic dry, unopened buds of an evergreen plant. Use whole clove buds sparingly, especially when they are chopped, as they can easily become overbearing in a dish. Cloves are commonly used in Indian cuisine for sweet or spicy dishes, and can also be used to enhance the taste of venison, boar and rabbit. Mixtures of spices with cloves are added in fish canning and sausage production, as well as in the conservation of products. Our favourite way to make ham is by sticking cloves two inches apart around your ham, add pineapple slices to cover the entirety of your ham, and bake! You will likely have the best ham you have ever tried!
